Standard small business bookkeeping does not tell a restaurant operator much. What matters is prime cost, how food and beverage percentages move against sales, where labor sits week by week, and whether the point-of-sale system and the bank agree. We set up the chart of accounts and handle the monthly bookkeeping so those figures come out of the close rather than out of a spreadsheet somebody rebuilds each period. We also reconcile point-of-sale data against deposits, so the revenue figures are reliable before anyone makes decisions from them.
